Millionaire’s Shortbread

De goddelijke Huisman blog is over a year old now. And while I do have to admit I have had more active periods of baking, but I do still bake something once every while. Even bought a new oven recently, so now I have two ovens!!

Millionaire’s shortbread is one of the easiest, and most delicious, things you can make. It is seriously unhealthy and you will feel like you’re about to explode if you eat too much of it. But still totally worth it. The ingredients are for quite a bit slab of shortbread. For the pictures I only used half the ingredients (you can keep the rest of the caramel in your freezer for quite a while).


– 200g flour
– 70g caster sugar
– 160g butter

Caramel Filling
– 200g butter
– 1 can (397g) condensed milk
– 4 tbsp (golden) syrup

Chocolate topping
– 150g white chocolate
– 150g dark chocolate

Step 1. Mix the ingredients for the base layer together (best to use hands) and press it down into a a tin of about 20 by 25cm. If you want to get the shortbread out of the tin easily, you might want to line it with some baking parchment. Make some holes in the dough with a fork and bake for about 40 minutes at 160°C (150°C for fan ovens).

Then take it out of the oven and leave to cool for a bit.

Step 2. To make the caramel layer first melt the butter in the microwave (make sure to use a big bowl). Then stir in the syrup and condensed milk. Make sure it’s well combined.

After that you just have to microwave it for about 7-8 minutes at about 750W. Give it a good stir every minute or so. It’ll be done once it has turned golden brown.

Step 3. Pour the caramel over the shortbread base and leave it to cool for quite a while. The caramel needs to have set enough for you to pour the chocolate on it.
Step 4. Once it has cooled down enough melt the chocolate (I use the microwave, but be careful not to burn it). Pour both chocolates on the caramel layer and divide it. Try to make nice swirly effects with a knife. Leave to set again and then it’s ready to eat!
