It’s almost Christmas!! The time of terrible sweaters, Christmas lights and over-eating is almost over.. Going back to my hometown today, going to watch Love Actually with my big sis tonight, church tomorrow morning and then it’s time to overindulge in unhealthy foods (ran a half marathon on Sunday to pro-actively get rid of the guilt).
So, one final Christmas recipe. Not even sure if it’s a Christmas tradition outside of the Low Countries, but here a loot of people eat tiramisu for dessert at Christmas. I wish I could bring it to my family’s Christmas dinner tomorrow, but don’t think ice cream will survive a 2 hour journey by bicycle, train and bus.
It’s been a really long time since I’ve had actual tiramisu, so don’t actually know whether the taste is similar. But I tried to mimic the ingredients as well as I could and it does taste really good. You could probaby add another layer of lady finger in the middle of the ice cream, but my container was full enough as it is.
Mascarpone Ice Cream
– 100ml milk
– 3 egg yolks
– 110g sugar
– 250g mascarpone
– 200ml cream
– 60g ladyfingers (get more of this and the coffee if you want more layers)
– 50ml of strong coffee (I used instant)
– 2 tbsp of coffee liquor (or any other liquor you like)
– 1-2 tbsp of cocoa powder
Step 1. Heat the milk till it’s almost boiling and in the meantime mix the egg yolks with the sugar in a small bowl. Pour the hot milk on the yolk and sugar mix while beating. Transfer it back to a pan and heat for a little more. Then pour it in a container and let it cool down.
Step 2. Mix the custard with the mascarpone.
Beat the cream till soft peaks in a mixing bowl.
Fold the custard and mascarpone and custard mix in with the cream.
If you have an ice cream machine put it in there for about 30-40 minutes. If you don’t put it in a container and put it in the freezer for an hour or 2. Break the ice crystals with a fork every half hour or so.
Step 3. Put the lady fingers at the bottom of your container and pour the coffee and liquor on top.
Then pour the soft ice cream on top and sprinkle the cocoa on top using a sieve. Place in freezer till it has completely frozen.
